TeX is a typesetting system, a What You See Is What You Mean system for writing, which gives really beautiful output. It's existed for over 30 years, and is now at version 3.1415926 (sic).
LaTeX is a front-end to TeX which makes it a bit simpler to use.
MacTeX is a package which gives graphical front ends to TeX and LaTeX using the distribution TeX Live, and many other goodies, such as a TeX package manager (tlmgr, sort of like apt-get or synaptic).
Seriously. Try it. Type in something like
\[
\frac { \sin(x^2) }
{ \cos(\pi^2) }
\]
(or check http://nitens.org/taraborelli/latex )
and see how beautiful it is.
